Amazing Protein Source for Pregnant Women

At my latest doctor’s appointment I was once again told that I was not consuming enough proteins. I know pregnant women need a lot (almost 70 grams per day), but sometimes it just seems impossible to keep up with demand, regardless of how much I eat.
During the second and third trimesters it becomes increasingly important to maintain high protein levels. Protein is responsible for cell development. So for my baby to get bigger and stronger, I found different way to meet my protein quota, without necessarily binging on meat.
Here is an absolutely scrumptious recipe I have honed for spicy chili soup. It relies on more than just meat for protein (a whole 35 grams per serving!), while tantalizing your taste buds. If spicy isn’t your thing, you can always tone it down by substituting mild chili and cutting out the peppers. Either way, you are in for a treat.
Ingredients:
3 cups water water
5 spicy Italian sausages, cut into slices
½ teaspoon salt
½ teaspoon jalapeno powder
½ teaspoon crushed red pepper
½ teaspoon black pepper
½ teaspoon chili powder
½ tablespoon onion powder
½ onion, chopped
4 cloves garlic, chopped
½ jar spicy chunky salsa
4 whole tomatoes, chopped
½ can tomato paste, or condensed tomato soup
1 can spicy chili with or without meat
1 can assorted beans (black or pinto work the best)
½ can whole kernel corn
1 can chicken or beef broth
4 ounces sour cream
Directions:
1. In a large pot over medium heat, sauté onion and garlic.
2. Once the onion and garlic are golden brown, add in sausage.
3. Five minutes later add water, salt, jalapeno powder, crushed red pepper, black pepper, chili powder, onion powder, salsa, tomatoes, tomato paste, chili, assorted beans , corn and broth.
4. Bring to a boil, and then reduce heat and simmer for 20 minutes.
5. Add sour cream and simmer 2 more minutes.
6. Let it sit and cool for 10 minutes.
7. Serve and enjoy!
